Hinava or fish salad, most often mackerel sliced in thin are tossed in a mixture of chilli, ginger, shallots, bitter gourd and lime dressing. The acid in the lime "cooks" the fish and turns the flesh a delicious milky white colour. Hinava is usually served as an appetiser or main dish to be eaten with rice.
